Salad with Chickpeas

Cut the cucumbers in half and use a spoon to remove the core and slice them.

Ingredients for Salad

  • 1 cucumber
  • 10 – 12 colored cherry tomatoes
  • ½ red onion
  • 1 avocado
  • 3 cup chickpeas – boiled
  • 10 – 15 black olives
  • 4 – 5 sprigs of fresh coriander
  • 3 slices of goat cheese

Ingredients for Salad Dressing

  • 1 tablespoon of tahini
  • Olive oil
  • ½ lime juice
  • 1 teaspoon of grape vinegar
  • 1 teaspoon of garlic powder
  • 1 teaspoon of granulated sugar
  • Salt
  • Black pepper

Cut the cucumbers in half and use a spoon to remove the core and slice them.
Divide your cherry tomatoes in half.
Slice your red onion into small edible.
Remove your avocado core and slice it.
Remove the seeds of the black olives.
Finely chop the fresh coriander.

In a mixing bowl, mix the cucumbers, cherry tomatoes, red onions, avocado, black olives, fresh coriander and chickpeas.

Add the tahini to a mixing bowl and whisk with olive oil using a whisk.
Add lime juice, grape vinegar, powdered garlic, powdered sugar, salt and pepper and continue to beat.
Take the salad to the plate you will serve and crumble the goat cheese on it.
Hover over the sauce you have prepared.
Last sprinkle with roasted sesame seeds, serve.
